It's a milder -4' this morning and we're pretty much going to stay there for the day, with a mix of sun and cloud later on. The snow predicted for Sunday did arrive but not as much as anticipated. Our friends had previously asked to reschedule dinner on Sunday just in case, so they are coming next week.
So with no one coming over we decided to make dinner for the Van Gaals. Being as Bernie is home but not very mobile, we cooked dinner and took it over to them.
We had Beer Braised Lamb Shanks, a potato dish called One Potato Two Potato Mash - a layer of white garlic mashed potatoes, topped with a layer of mashed sweet potatoes, then a topping of bread crumbs and grated cheddar cheese. We also had honey glazed carrots, green bean casserole and coleslaw. Dessert was a simple rhubarb and apple cobbler. All easy things to prepare but more importantly, easy to transport.
Bernie is only able to sit up for short periods of time so we called him to the table when it was ready to eat, and then as soon as he was done he went back to lie down. But I thought he did very well to last as long as he did.
If they can't come to us for dinner, there's no reason dinner can't come to them. All in all, it was a great evening.
Friday night we went down the road to Peake's for wings and beer. They have these really great wings - huge meaty and nicely breaded, with the selection of sauces on the side.
I worked on Saturday and stopped for some groceries on my way home. I picked up some ground chicken and Lloyd made some burgers with it. They were really delicious along with a caesar salad. A perfect light meal for a Saturday night in front of the TV.
Other than that, it was a pretty quiet weekend. I did do a bit of tidying and rearranging as I've just purchased a new bench for my kitchen. Stay tuned - more on that later. I have a plan - but then I usually do!
