Thursday, February 16th - my sweetie arrives today

It's 4:30 and I'm wide awake so I might as well be up doing something useful. It's an overcast -2' but no wind so it's a very pleasant morning. Last night it was just above freezing and it was an absolutely gorgeous evening, after a sunny high of +7' yesterday. It certainly felt like spring, not the middle of February. Today will be  slightly cooler, staying around the -2' mark but the sun will come out once in a while so it will be a lovely day once again today.

Not much news today other than the fact that Lloyd is arriving a little after 2:00 this afternoon. I'm taking my lunch at that time so I can go and pick him up.

As promised earlier in the week, here are the a couple of more recipes from last Friday night.

Tabitha made a layered dip that I don't really know the name of,  but the recipe went something like this and it was really good!


1 cup sour cream
1-8 oz package cream cheese, softened
8 oz lean ground beef
1 pkg taco seasoning
1 cup shredded tex mex cheese (or cheese of your choice)


Mix together the sour cream and the cream cheese. Spread onto serving plate
Brown ground beef and taco seasoning, using only ½ the amount of water indicated on the seasoning package
Simmer for 5 minutes and spread on top of the sour cream/cream cheese mixture
Cover with layers of shredded lettuce, diced tomatoes, sliced green onions and any other veggies you wish to add
Top with shredded cheese


Serve with nacho chips
